What to do with a pound of diced chicken?

I need inspiration. Have just got this out of the freezer and want to do something quick and easy when I get home from work tomorrow that is suitable for the hot weather. Any ideas?

Marinate in ginger,garlic,soy,honey and sherry.
Thread onto skewers and grill/bbq.

That sounds perfect. Just couldn't think past my standard recipes iykwim.

Thanks kama but did ham salad tonight so kebabs win I think. Maybe with couscous.............mouth's watering thinking about it!
