the easiest chocolate fudge I have ever made

150g/5oz granulated sugar
55g/2oz cocoa powder
40g/1½oz butter
40g/1½oz milk
1 tbsp golden syrup
450g/1lb icing sugar, sifted well - this is way too much
1 tsp vanilla extract
85g/3oz chopped nuts (optional)

basically add the gran sugar, cocoa powder, butter, milk and gold syrup together in a pan and heat until boiling. Stir constantly (at boiling point) for 3 minutes. Then take it off the heat and add the icing sugar, van extract and nuts.

I used this recipe just now but there's no way you need 1 lb of icing sugar. I added it all and had to add extra milk - I think you could probably start with half a pound and then add until you can't stir anymore (I have a feeling you will probably need 3/4 of a lb of icing sugar).

It really was incredibly easy - the kids loved making it and you don't have to add the nuts if you are worried about nut allergies.

oops should have said - once you have taken it off the heat and added the icing sugar, van extract and nuts you stir till it is all completely blended then pour into a 20cm/8inch tray and leave to set (either on the side or in the fridge if v warm). I found a square 20cm tin was slightly too big but the fudge was very firm by then anyway so it didn't matter too much.
