Tell me your best jar recipes please (also a question on frozen/dried fruit for jams)

I have many jars and many requests for a selection of jams/chutneys/pickles for Christmas from family.

So far I have,

Apricot Jam
Dill Pickles
Cranberry and Apple Chutney
Lemon and Ginger Marmalade
Picked onions.

Can everyone tell me their favourite recipes or just what they like to eat in the way of preserves.

Also if anyone can give me recipes that I can use frozen/dried fruit for I'd be grateful. Can I just replace fresh with rehydrated dried fruit in jams or thawed frozen fruit.

I make a lot of jam from frozen fruit, I pick it on the allotment and freeze it til I have time to deal with it. It's a bit watery and needs cooking for longer to drive the extra liquid off but that's all.

That sounds lovely Prof, I can't think of where I'd get redcurrants from though, I'm pretty limited to Tesco, Asda or Sainsbury's.

Frozen ones? tbh I can't remember if I've seen them in the fruit section at the supermarket or not.
