The yoghurt helps to cool it down without dampening the flavour - ds has eaten this since he was about 9mo but there is enough "flavour" for all of us
1 lb of chicken breasts
medium sized onion
2 cloves garlic
1/2 inch fresh ginger, finely chopped/grated
1 tablespoon medium curry powder
1 tin chopped tomatoes
1 knorr chicken stock cube
1/2 pint water
1 tablespoon cornflour
4oz raisins
1 small tin crushed pineapple
200g natural or greek yoghurt
Finely chop onion, fry in a little oil. Add finely chopped garlic and ginger. Mix in the curry powder, add chopped chicken breasts, fry for a couple of minutes. Add in the tinned tomatoes, raisins and pineapple. Chop up the stock cube and add in. Add the water and let it simmer for 30 mins. Thicken the sauce with a tablespoon of cornflour mixed to a paste with cold water. Simmer for a couple of minutes.
Remove from heat, stir in yoghurt, and serve. Bon appetit!
