Can you flavour olives at home?

Can you open a jar of olives and add a few chillies or mint?

Anyone done anything like that and have any ideas for what would go and not spoil?

Yes I do this quite often - I use the big green ones with the stone in. Rinse them and then slosh some decent-ish olive oil over them.

Chilli flakes or slices of fresh red chilli, slightly squashed clove of garlic and a sprig of rosemary is a good combo. Leave to infuse for an hour or two if you can wait!

Yep I use a jar of black and a jar of green, chuck them in a tub with a couple of minced garlic cloves, some olive oil and a good shake or dried oregano. Give them a good shake around and leave for a couple of hours.

Oo they sound nice, as well as for me it's also for the hamper I'm doing my dm but I would assume opening them and flavouring them isn't going to make them go off?

Yep as shoewhore says the olives with the stones taste better....sometimes I add lemon rind too.

Someone may know better than me but I would have thought once opened the olives would need to be refrigerated?

I've never kept them long enough to find out Grin
