a birthday cake? It's delicious and lasted a good few days when I used it for cupcakes. Would I be able to use the same mix in an 7 or 8in tin?

Otherwise, what's the best birthday cake sponge, suitable for decorating? Just round, not carving etc.

Many thanks.

this is really simple and never fails.

I follow the recipe for sponge on the side of the Stork packet but upped it to a 4 egg recipe (240g of Stork, SR flour and caster sugar plus a tsp baking powder) and used 2 x 8 inch tins.

The only difference between that and Mike's recipe is that Mike's recipe has a little bit more flour and a bit of milk.

Thanks both - will try one or the other. I had come across Mike's one earlier in the day and had forgotten about the one on the side of the Stork tub!
