And I would love suggestions for meat free recipes please. I know I can use it as a garnish but there is a LOT of it.

You can chop it all up, stick it in a freezer bag and then freeze it. Then just add a handful whenever you're making a curry. It's not quite the same flavour as fresh coriander but it's better than wasting it. Or make ups some batches of curry paste with loads of coriander then freeze it for future curry feasts.
