Help please I just cannot get my bonfire toffee to 270 and its Been on a rolling boil for almost 45 mins !

It's now about 1 cm from the tip of a huge jam pan and so I can't turn it up or it will spill over ! Any tips ipl ease its actually cooling ! I got up to 250 now back at 230 ??

I had the same problem one year. Vert frustrating! Have since been told if you leave a wooden spoon in the pan while it boils it won't boil over, meaning you can turn it up. Haven't tried it myself though... Hope you got it to work!
