It's the dreaded mince night..

Every time it's mince night we end up having lasagne/ bolognaise/ shepherds pie/ chilli.... And it's boring! We only use a handful worth of mince for a meal for 4, so tend to bulk out with veg/ beans, but geez is 4 meals on rotation dull!
So.. What else can I make with the dreaded mince?!

Nigella's Korean Keema is really good.

Marinade mince in 1 tbsp chilli puree, 1 tbsp rice wine vinegar, 2 tbsp soy sauce, 1 tbsp honey.

Fry three chopped spring onions and some peas. Add the marinaded mince to this. Fry until cooked. Add a little more rice wine vinegar and a little water to deglaze. Serve with boiled rice and topped with fresh coriander.

It's really good and so easy.

We had home made mince ragu calzone for lunch with crushed garlic, rosemary and olive oil rubbed into the top for extra aroma whilst cooking.

I've made a beef casserole/ soup recently that was a big hit with a pack of dried soup mix from asda (35p for 500g, 300 g mince, carrots, leek, celery, can tomatos etc) it portioned into four meals! Masses and masses once the soup mix rehydrated and its tasty. We originally had it with little garlic dough balls but then I served it in yorkshire puds with a piped mash top.

My favourite mince recipe is a curry: lamb or beef keema. To the lamb I add peas, finely diced carrot and sweetcorn; to the beef I add spinach and tomatoes. I don't have recipes to hand but if you Google keema I'm sure you'll find loads :)

Zenzero that keema meatball curry looks fab. I don't use readymade pastes so what's your paste mix?

I love the mince and dumplings recipe that the Hairy Bikers have, I make it so that the dumplings spread out and almost cover the top of the mince, like a cobbler. It's the one from the Meals on Wheels show.

You could add pulses/beans etc to pad the mince out if needed, but with the dumplings its really filling.

Tortillas - either fry mince with spices etc and then fill tortillas, fold up into squares and bake in oven with a little tomato sauce and cheese on top, or let everyone fill their own at the table, offer lots of things like grated cheese, shredded lettuce, diced peppers and sweetcorn (like for fajitas).
