what to do with 4 tubs of spinach and ricotta sauce??

My ridiculous bargain hunting husband bought 4 pots of Sainsburys spinach and ricotta "fresh" pasta sauce because they were on offer.

They're currently taking up valuable space in the freezer so I want to find a use for them.

Any suggestions on how to use it all up?!

Cannelloni? Also makes a nice top layer for Chicken Lasagne

I think it would be too sloppy to stuff into canneloni.

I think it's more of a bechamel consistency, so I probably need to think of recipes that use bechamel which I could substitute for this stuff. I made a normal lasagne on Saturday which we have loads of leftovers from, so probably need to think of non-lasagne ideas!

Use it to make the sauce in pies - fish topped with mash or chicken with some mushrooms topped with puff pastry?

You could make a kind of crespelle, if you fry off sliced mushrooms till they cook off their liquid then stir them into the sauce with some diced ham. Make a batch of pancakes and fill and roll them with the spinach and mushroom, lay them, seam side down, in a deep rectangular pan then top with a tomato sauce and a grating of parmesan and bake till golden.

It is a bit of a faff but you could make two, one to cook and eat immediately and one to freeze to bake and eat in a few weeks when it will be no effort at all!

Fish or chicken pie is a good shout, and I also really like the idea of the crespelle.

I need to convince dh that pancakes are nice (he is renowned in our family as a human dustbin that will eat anything, but he has a couple of things that he won't eat which are completely inexplicable to me - pancakes being one, weirdo).

But maybe I will do it for me and DD when Dh is out. She'd probably like it.
