DS I think will be a vegetarian very soon, some advice or suggestions on what to cook please

its becoming apparent my DS doesnt like meat - doesnt like the look or texture he says. He loves, loves, loves vegetables eg. carrots, brocolli, sweetcorn, cauliflower, peas, green beans, cabbage, corgettes will quite happily eat a whoel plate full.

He will at a push eat sausages, maybe bacon and likes tuna in sandwiches but that's it.

What "meals" can I cook him using vegetables - he doesnt like anything saucy

You need Hugh Fearnley Whittingstall's Veg book. Lots of vegetable based recipes but not too many cheese sauce and tomato sauce type recipes. One of my favourites when I was veggie was half a pepper filled with half a tomato and some pesto baked in the oven. Plenty of variations on that theme - stuff the pepper with new potatoes cut in half and feta and pesto.
Does he like lentils? I ate a lot of puy lentils flavoured up with all sorts.
Roasted vegetable cous cous? Delia does a yummy one with Harissa but it's really tasty without the Harissa.

Tortilla - I regularly make Spanish omelette style tortilla but with lots of different veg. Is yummy with peppers and feta or spring veg like green beans and asparagus. Would be delicious with roasted sweet potato and butternut mixed in.

Roast veg- peppers, squash, carrots, parsnips etc

Pizza

Is soupy classed as saucy?

roasted squash stuffed with veg and feta

Courgette and feta filo pie

Stirfry with noodles

Fried rice with chopped veg and egg

Roasted chickpeas are lovely snacks with some spice on.

Omelette

Is risotto saucy? You can make quite a dry version, the aforementioned Hugh fearnly does a carrot and broad bean risotto in the veg book which is great, also there is a recipe for Swede and potato pasty which is to die for. It's a good book IMO (for non experienced veggies- when we covered it in the book club, the vegetarians found it lacking, the meat eaters loved it- so he's obviously not breaking any new ground for vegetarians)

I was vegetarian when I was little (I lived near some nice fluffy lambs and made a connection between them and Shepherds' Pie). My Mum used to make me a lovely cheese and onion pie. I also loved vegetable and lentil lasagne. Butternut squash makes a nice risotto.

Veggie burgers are great and can feel like a treat. We like carrot and sesame ones on bbcgoodfood but also chickpea and bean ones.

Veggie pies?

Squash & chickpea curry
Veggie chilli & wedges
Mushroom & leek suet pies
Roasted veg with Quorn sausages

How about veggie fajitas/wraps? I make various wraps with beans, and veg mixed with chilli powder, oregano and cumin. I also make wraps filled with refried beans, Mexican rice and cheese, served with salad.

My 9 yo dd is like this. The only meat she will eat is taco mince, a bit belly pork (she likes the crunch) and very specific chicken nuggets. McDonalds so taking all tips on board.

Hi this is the thread I started when dtd2 went veggie as her new year resolution (I've name-changed since).

She's still going strong and we've used a lot of the ideas.
