I have a slow cooker,

Vege stock

A chicken carcass, with the juices saved.

Frozen celery, onion and carrots.

Parsley & sage dried herbs.

But what to do with them?

I would boil the carcass in water with some of the celery, onion and carrots (not all, this is just to get flavour... and would do it in a pan not the slow cooker )- bring to the boil and simmer for c. 30 mins. Cool and drain, pick out any bits of chicken. Fry up onion, celery and carrots, add some plain flour and cook it a bit . Then gradually add the stock to thicken, put the chicken back in, with the herbs. Taste, and if it needs more flavour add some stock. Done.

Probably too late for you now but I strip off any meat and chuck the carcass (including the skin, this makes it ricer) and juices into the slow cooker, cover with water and leave cooking overnight.

Next day I strain it and leave to cool (you will end up with a layer of fat on the top - I remove this). Fry onion, garlic, maybe some ginger, add stock and boil it with handful of rice, frozen peas, sweetcorn etc. Maybe add a stock cube.

My dcs love it.
