any ideas for a pudding to use up my glut of strawberries?

We went PYO so I could make jam. Which I did. But I rather over-estimated on the amount of strawbs I would need. I can't make more jam because I do not have jars. Have also stewed a load with apples to freeze for the kids. Now DH (who doesn't like them) is hankering after a strawberry pudding. Any easyish (ie not tons of ingredients) ideas? Also got pastry in fridge already.

whizz them into a smoothie - with some random fruit (bananas are great with strawberries) and yoghurt if you like, possibly sweetened with a bit of honey and freeze in an ice lolly maker - healthy lollies on tap. I use up any ond fruit this way.

How about a summer pudding (add raspberries, redcurrants or any other summer fruit you feel like, cook lightly with small amount of sugar, line a greased pudding bowl with slices of bread, crusts removed, add cooked fruit, put more bread on top, put a saucer with weights on top, refrigerate, then turn outpudding on to a plate)?

I whizz some in a blender then freeze in small pots to use for ice cream sauce.

Thanks all. I was limited with what I had in and no time to go to the shop. So I made a strawberry dessert cake which went horribly wrong because I put it in too small a tin - recipe did not specify. And some strawberries mascarpone with sable biscuits. Bit thin because did not have enough mascarpone. Think I might go to PYO again next week though so will be revisiting this thread.
