So, I had an amazing recipe for roast pork belly with thyme, rosemary and cider. It was IMMENSE. I haven't made it in a while but today thought, ooh, I loved that recipe, I'll make it this week. Went to my old recipes notebook that i keep the clipped out recipes from magazines in and somehow it's come unstuck from the page and disappeared. Never to be seen again
.
I can remember very few details bar the main ingredients, and the fact that it may have had honey in it. Also, I have a funny feeling it came from the Times, so now behind the paywall. Might have been a cheffy dude as he had very good tips about dealing with the pork itself to give incredible crackling. Lucas/Lucas something maybe?
Oh this is driving me nuts. If I can't have THE recipe, may I please have your best roast pork recipes please? Crackling tips especially welcome!
