What you roast a joint of beef which way up does it go?

This is payback for pointing and laughing at my friend who roasted a chicken upside down when we were 21.

I've just performed a minor operation to remove it's string vest.

I cut off the end to discover it's medium rare, and my life, it's chewy. Is beef supposed to be chewy? We're not vegetarian, I just never do red meat.

Depends what cut it was?

It's now all consumed. 8yo DD described it as "rough", and asked if ours was "smooth" , but asked for seconds. (She normally claims to be vegetarian, so it couldn't have been that bad!)
