So Halloween is almost upon us and I thought it would be fun to make pumpkin lanterns with my almost 3 year old.

However, it always seems such a waste to throw away the flesh.
Is it worth eating or is it nasty and tough because the pumpkins are so big?
If it is good to eat, please share your favourite recipes.

Pumpkin Soup

I roast the flesh with a little oil, salt and pepper for 30 - 45 mins.

Then fry a chopped onion in a little oil, add the roasted flesh and chicken/vegetable stock until just covering.

After about 30min check to see if all soft if yes blend till smooth, you may need to adjust seasoning I find it takes a lot of black pepper.

Serve with a handfull of grated cheese in the soup and crusty bread.

You can use garlic, but I find it all you can taste.
