If I bake this cake tonight, will it be fine on Saturday?

I've over committed for a bake sale so trying to figure out how to get everything done...

I'm planning a chocolate cake - I was thinking of baking the sponges tonight (sandwich style cake) then sandwiching them together and icing tomorrow. If I keep the sponges in an airtight container tonight, will it still be ok by tomorrow?

And if anyone knows how long oat & cranberry flapjacks keep for that would be useful too...

What time is the cake sale on sat? I'd make the sponge as late as possible tbh.

The cake sale is on Sat afternoon - but I have plans on Sat morning unfortunately. I had meant to freeze the sponges and then defrost them in time to decorate tomorrow night.

I'd thought about wrapping the cake in baking parchment and then storing in an airtight container.
