I am looking for some ideas for cakes, traets etc that can be made in advance, portioned and frozen.

Do any of you do this and could pass on some recipies please?

My MIL freezes every traybake she makes-and as the irish equivalent of a WI lady she's made any type you can think of. She always has a batch of something in the freezer incase someone pops in. Her niece has bought her frozen ones from a catering company and they were a flapjack creation with caramel, seeds and cranberries on top. Heavenly does not describe them! MILs favorites are the rice crispie chocolate/mars bar variety with any number of variations. They always taste fine out of the freezer and I won't even eat frozen bread (I'm quite fussy). She does Malteser squares, true buns. My own mum even makes a square cheese cake and cuts it up like traybakes and freezes them, these are fine if you can defrost naturally or in a fridge,I once was too impatient and tried to speed things up with the microwave-disaster!

Good luck making something.

Also when mum buys any sort of cake she portions it and freezes it , her freezer always has carrot cake sliced in it. I think the only thing that mighty work would be pastry as it could go soggy on defrost.

Gosh I could devour something sweet now. Thankfully my freezer is not stocked like theirs!

Thank you - I will let you know how I get on
