Mushroom pate without a processor? Or other good shiitake recipes?

We've got a big crate full of shiitake mushrooms & more coming tomorrow - had mushroom toad in the hole tonight, looking for other things to do (they're a bit gone over to dry)

I thought mushroom pate might be good, but all the recipes I've found online use a food processor, which we don't have - any thoughts on whether putting the whole lot through a mincer would work? (Needs to be a no-cream-cheese recipe as DH can't have cow dairy.)

If anyone else finds this thread, I made it putting it through a mincer, and it worked beautifully (vegan recipe with blanched almonds as the 'filler')

I've also made Russian pickled mushrooms and about to make mushroom 'bacon' tonight!

Here's the basis for the mushroom pate I used. I'm not great at following recipes, so it was all rather approximate. I didn't toast the almonds - I just poured boiling water over them & then skinned them. So basically softened onion/garlic/mushrooms/thyme in olive oil, put through the mincer along with the almonds, then fried gently a little more & mixed in balsamic vinegar. I think it would be really good done in a processor, too, smoother than the mincer.

Yes, its really good :)

A friend of a friend grows shiitake mushrooms for a living, he always makes it with overgrown mushrooms to bring to parties! I got the instructions link from him (in fact here is his website in case there are any other useful recipes)

Wonder if Waitrose is the only place to but fresh Shiitake mushrooms, looked online and Tesco and Sainsburys don't seem to do them.
Bet it wouldnt work with normal mushrooms? Never used shiitakes but believe they have that extra umami taste that normal ones don't?

I don't see why it wouldn't work with normal mushrooms - might not be quite the same but I should think it would be nice.

I was looking for shiitake recipes as we've got 2 logs growing them so I have several lbs of them right now . . .
