Has anyone got a reliable gluten free carrot cake recipe?

Anyone? I tried one and it was too soggy and another that was too dry. It's for a christening, so needs to be good!

Have you tried the cake mix from doves farm? They usually turn out really well.

I use doves farm too, usually add a little more of the flour if I'm cooking gf.

Just use gluten free flour in any cake recipe you like! I never change the entire recipe for gluten free- just the flour :-)

I've baked GF for the first time recently. I've used my usual sponge recipe (weight of eggs x everything else) and added half a teaspoon of xanthan gum. It amazed me how trouble free it was, and got as good as if not better results than usual Smile
