Has anyone got a reliable gluten free carrot cake recipe?

Anyone? I tried one and it was too soggy and another that was too dry. It's for a christening, so needs to be good!

Have you tried the cake mix from doves farm? They usually turn out really well.

Ooh, haven't come across those, I'll check them out at big sainsburys/waitrose later.

I use doves farm too, usually add a little more of the flour if I'm cooking gf.

Just use gluten free flour in any cake recipe you like! I never change the entire recipe for gluten free- just the flour :-)

I've baked GF for the first time recently. I've used my usual sponge recipe (weight of eggs x everything else) and added half a teaspoon of xanthan gum. It amazed me how trouble free it was, and got as good as if not better results than usual
