Dessert/eating apples. What are they good for. uh. huh.

Please excuse dodgy song reference in title.

I have a large basket of eating apples. Quite tangy, but they hold their shape too well to use for apple sauce, apple crumble etc and lose their oomph a bit.

I've never made chutney - does one use eaters or cookers for that?

Are there any other recipes eaters are good for other than tarte tatin?

Sorry couldn't resist. Cake or apple tart or toffee apple pie ( like banoffee but apple not banana )

There is nothing wrong with using apples that hold their shape in Apple Crumble. My mother's orchard has many different varieties and I just use whatever windfalls there are to do stewed apple or crumbles. Also, for Tarte Tatin, you specifically need apples that hold their shape like Cox, Russet, Granny Smith or Braeburn.

Buy puff pastry, roll it out, sprinkle on chunks of peeled eating apples and butter cut into dice. Sprinkle over some brown sugar and bake. Hey presto, French apple tart.
