What can I make with tin green lentils (veggie meal)

A while ago I bought a tin of green lentils and have never got around to doing anything with them.

Can anyone give me ideas for a veggie meal I can cook with them please.

I use them in place of meat for a shephards pie, just fry off a chopped onion, add diced carrot and some seasoning then add the lentils! Top with mashed potato. I also use it in place of meat in spag bol and in loads of other dishes too :)

Chop up some paneer, add a jar of curry sauce and the lentils, and cook on the hob for a few minutes. Serve with basmati rice.

Fry onion, garlic and diced carrot and celery.
Add tablespoon paprika, teaspoon or more of grainy mustard, teaspoon honey and big grind of black pepper.
Add a tub of passata and then fill empty tub with water and add that.
Cook until carrots etc nearly soft.
Add drained lentils and sliced veggie hotdog sausages and cook to warm through.
It might need salt, more honey and/or mustard, or maybe some chilli flakes too. Adapt to taste.

Or whack them into whatever sauce you use for veggie spag bol or veggie lasagne.

I vote for shepardess pie too! It's especially nice if you add some brown sauce to the lentil/ veg mix whilst cooking on the hob.

I make a non-veggie sausage casserole that includes green lentils - I think it would be nice with veggie sausages too.

Fry off the sausages, and put aside. Fry finely sliced onions until nicely browned, then return sausages to the pan, along with the drained lentils, a can of chopped tomatoes, a couple of sprigs of rosemary, and about a can-ful of water. Simmer for about 25 minutes, until the sausages are cooked through (I don't know if veggie sausages cook through quicker than meat ones - sorry), then add a drained tin of canellini beans, and simmer for another 5 minutes or so. Serve with warm, crusty bread.

Preparation Time: 5 minutes, Cooking Time: 12 minutes

50g / 2oz butter
1 onion, peeled and chopped
2 cloves garlic, peeled and crushed
pinch of garam masala
1/4 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon chilli powder
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
400g / 14oz can green lentils, drained and washed
1 tablespoon double cream

Lentil bake
Make a base tomato sauce add lentils and cubed feta cheese. top with cubed fried potatoes and grated cheese.
