Milk instead of buttermilk in recipes?

Specifically for a recipe I've seen for breakfast muffins using rolled oats (I've a bag I need to use up and wanted a change from porridge). Oats are soaked overnight in buttermilk, what will the difference be if I use ordinary milk? I guess buttermilk is creamier so probably better for some recipes?

You can add a teaspoon of lemon juice to it.

Add a table spoon of lemon juice to 250ml milk leave for ten minutes = buttermilk
