Home made Burgers...what do you add?

Hiya
just after some suggestions for home made burgers. What do you put in yours for flavour? I've made some before but they were very bland, so any suggestions would be really appreciated.

Pancetta (or bacony bits) and onion fried together, some fresh herbs, salt and pepper, and a dash of tamari (that's like soy sauce only gluten-free).

well cant help you as I dont put anything in mine - just plain beef mince. However if you want to spice it up a bit why not add some cumin/black pepper, maybe a bit of chilli?

For lamb burgers I add finely chopped onion and grated apple, maybe some garlic or herbs too...

grated parmasan makes burgers taste nice too. you can use fresh or out of a tub, but fresh tastes nicer.

We add finely chopped onion, garlic, chilli, black pepper and dried oregano, and also tend to turn them into cheeseburgers with mature cheddar which always helps.

The other trick is not to use extra-lean mince, just use plain old steak mince, as it's the fat in it that's the tasty bit.

All the above, but especially cheese. If your children like it, blue cheese is fantastic in burgers. It's a great way of using up the dried up, slightly scabby bits left in the back of the fridge.

thanks all of you, that's fantastic. I was thinking of trying grated apple as it's pork mince I have this time and I thought that might be quite nice.

i add caramelised onions, pancetta, bbq spice, tomato sauce and an egg to bind it all together.

I actually fry half of white onion then mix it when cool with beef mince, fresh breadcrumbs (about 2-3 slices of bread made into breadcrumbs), 2 teaspoons of soy sauce, 1 medium egg and 1 teasppon of dry mixed herbs + seasoning (salt and pepper).
