Tomato soup with tinned tomato's?

Just wondering if anyone has attempted this and if so how was it?

I can remember making utterly fabulous tomato soup from fresh French tomato's many moons ago but the offings in the supermarkets are very uninspiring!

Thought using tinned might be ok and also economical.

Am thinking I would maybe need fresh onions, garlic and basil plus vegtabel stock and the usual seasonings but very interested in whether anyone else has actually attempted this.

I always do and it's a tasty soup although I usually add red lentils and often chorizo so its not a plain tomato flavour I'm looking for. My recipe is:

Fry an onion, two celery sticks and two carrots in olive oil (if using chorizo fry this too)
Add three tins of tomatoes, three pints of stock, a cup of red lentils
Boil then simmer for 40 mins adding water if needed
Season and blitz in blender.

Yes of course! Tomato basil soup made with basics tinned tomatoes is a staple in our house.

We add a bit of honey too, to take the edge off the acidity, and swirl in a little sour cream at the table.

I use supermarket cheapo tomatoes but pimp them up by slow roasting with herbs and olive oil first. Gets rid of the water and intensifies the flavour. When will supermarkets realise we don't want firm tasteless tomatoes Sad

Recipe:

Fry a large onion in butter + a little olive oil, add 2-3 cloves minced garlic. Add 400ml stock, 1 400g tin tomatoes, 1tsp sea salt and 1Tbsp honey. Simmer 10-15 min and then blend till smooth if you want to. Add a large handful torn fresh basil and fresh ground pepper to taste.

If you want it a bit richer you can add some cream or even sour cream to taste at the blending stage. We prefer to leave it out and just have a little sour cream dolloped in if you want it.

Was worried I would be derided for my basic cooking aspirations Smile

I really like the idea of adding lentils (am verge so this will bulk it up) and also the honey, this is new on me but I think I will try it!
