Easy prepare food for whole family

I need help with ideas please. DH eats fish, but no other meat. DS (2) is pretty good, but generally seems to have some issues with texture ? so he doesn?t tend to eat meat in ?strips? as it were eg chops/steak/chicken pieces and will only eat pasta sometimes (I wish I could figure out what it is that he is okay with vs what he isn?t!) etc. DH is SAHD so does most of DS? meals but between not eating meat and not being much of a cook at the best of times, he tends to rely on feeding DS a combination of kids ready meals, prepared food/leftovers made by me and meals he pulls together like eggs/fish fingers/crumbed chicken with vegetables/rice etc.
I cook things like stews and mince etc for myself and DS and freeze portions, so he?s doing okay on that. But can I have some ideas on things he might like that either I can prepare in advance and DH just has to heat, or that are easy to prepare? I feel he needs more variety.
For example, tomorrow night we will have salmon baked in foil parcels with pesto ? I will prepare the parcels tonight and DH will then cook his and DS? alongside some vegetables and potatoes. When I get home from work, DH will be going out while I put DS to bed so will pop the third parcel in the oven for me to have afterwards. I need more ideas like that. Meat ideas are fine as DH just eats the veggies and/or a veggie prepared sausage or whatever.

something like tuna pasta with sweetcorn and pepper mixed through with mayo so you can eat it cold maybe?
soups like lentil and vegetable are easy to make, served with rolls and butter.
homemade fish goujons or chicken bits coated with rice crispies?
really mild curry with naan bread, or easy things for your dh to make like sausages and mash or bolgnese with veggie substitues?

something I find easy for quick in the oven jobs are pitta breads, spread with tomato puree with cheese and whatever else on top to make pitta pizzas Smile

Onceuponathyme: I had actually been thinking about that and even looked at pittas in my online shopping basket. Did not buy, but am now inspired and will do so.

Along the same lines as your salmon parcels - you could do the same with lots of other kinds of fish and just mix up the flavourings - e.g. lime and chipotle/ginger, chili and lemongrass/cumin and coriander. Maybe that's very similar to what you already eat though!

For preparing in advance - I love all sorts of bean and pulse stews - dahl is delicious if your DS will eat it, but there are also the Mediterranean tomato based stews.

Tacos are another easy dinner to put together - you could make the refried beans in advance and then all your DH has to do is warm them, shred some lettuce, grate some cheese and maybe mash up an avocado or two?
