Spinach and ricotta lasagne....how do you make it?

That's all really.

I have a tomato hating 8 year old, so this seems like an option. How do you make yours?

There's a lovely Delia recipe in her vegetarian book, I'm sure all her recipes are on her website too (can't do linkys on phone sorry)

Be very very careful with it as the spinach can make it a watery mess.

I make a mean spinach and mushroom one, putting the spinach in with the béchamel. I use those frozen cubes of spinach, warm it through then leave it in the fridge overnight to get rid of the water.

Hhhmm, well mine has a tomato sauce so you'd need to swap that for béchamel.

But wilt spinach and squeeze out water (or if using frozen, leave in a sieve to drain as it defrosts). Mix ricotta, one egg, bit of parmesan and black pepper. Layer (in my case with a tomato sauce). Top with cheese. Cook for about 35 minutes.
