Courgette soup - sounds yum, and would it freeze?

I think it would, the only thing I would be concerned about is that the bits of courgette that aren't blended might taste a bit woolly in texture on defrosting. I would be tempted to blend all of it for freezing. If you wanted to add texture or topping you could do croutons or gremolata (chopped parsley lemon zest and garlic sprinkles) and/ or some crumbed feta and drizzle of olive oil for added interest

Cristiane, I think I agree - blocks of courgette would probably not freeze well. Your ideas about adding texture/flavour after defrosting are very good ones! Thank you.
