easy veggie family meals that lo can have too

My girl is 14 months now. i am veggie, dh isnt. we eat a lot of spicy stuff and have a few meals we repeat each week but need more ideas ! they need to be fairly quick and easy tho ?

Lentil bolognaise is one that my (non-veggie) kids will accept; pretty sure you can find a recipe for it in the Mumsnet receipe section.

Macaroni cheese is another sure-fire winner, chuck in a load of veg too (I use the Cranks receipe book version).

The really ODD one that my DD likes, is Mushroom Pithivers with puy lentils

Other than that, I also struggle; have just started another thread seeking pulses inspiration...

Oh, and with us it's the other way round; I'm not veggie but DH is, so we too have juggling act re eating veggie/non veggie food.

Noodles is another one that's a winner - chop loads of veg very small, saute them (add 5-spice, surprisingly our then 2yo really liked this as not 'hot'), add dry noodle block, veg stock, and quorn chicken pieces - if you are OK with using quorn. Once the noodles are soft you can snip at them with scissors to make them easier for a toddler to eat. You can either have this as soup (ie more stock) or noodles (stock nearly boiled off). Adding frozen sweetcorn or peas at the last minute helps cool it down for kids to eat; you can rescue their portion and heat up again for adults. I like to add sesame oil to this too for the flavour. Yummy!

Frittata?

I fry some onion and courgette then sweat off some spinach. Add beaten eggs and dill and once the bottom is cooked I pop a few halved cherry toms and cubes of feta cheese on top and slide under a hot grill until cooked.

Pasta is always an easy meal.

We have the same set-up. I'm veggie but dh isn't. We have a veggie household though so I'm bringing up my daughter (2 years) vegetarian.

When I first started weaning my daughter, I struggled to find quick and healthy meals for veggie children so decided to start a blog of our favourite recipes: broccoliandricecakes.wordpress.com/
