I want to make a salad for lunch for myself tomorrow that I can take with me for a long day out.

I am 14 wks pg so have take that into consideration obv.

It will be a long day so I want a really nice luxurious salad that will hit the spot at lunch time.

Would appreciate any other healthy suggestions that help me keep going throughout the day.

Nicoise
Keep dressing and leaves out of it until it's time to eat.

I'm a bit worried about the eggs and tuna because of being pregnant.

Would they be ok if I made it in the morning?

Lambs lettuce, bits of bacon, soft goats cheese (or feta, if you're worried about soft cheeses) and balsamic glaze.

Bloody lovely.

UriGeller · 31/07/2013 15:39

Oops and cherry tomatoes!

RemusLupinsBiggestGroupie · 31/07/2013 15:39

I like a Greek salad, with no tomato but with lots of leaves. I soak the thinly sliced red onion in a spoonful of red wine to soften it a bit and put a few capers in there too.

Nice one Uri!!

I like the bistro salad from Sainsbo's - with grated beetroot in it.

Nice with bits of chicken and tomato, wrapped up in a wrap.

Nice lettuce (not iceburg!), cucumber, Grated beetroot and carrot capers and gherkins and then either halloumi, feta or tuna. Flipping gorgeous!

Nice leaves, cucumber, little sweet tomatoes and spring onion chopped, with toasted pecan nuts, fried bacon bits and fried chicken breast. Dress with balsamic dressing.

MothershipG · 31/07/2013 17:30

Chèvre, beetroot, pumpkin seeds and green leaves (obviously keep the leaves separate until you're ready to eat). Yummy!

Actually is chèvre allowed when you're upduffed? Maybe replace with hard goat's cheese, I'm sure it'll still be lush.

Taffeta · 31/07/2013 21:11

Cooked and cooled puy lentils, sun dried tomatoes, tiny bits of feta or goats cheese or mozzarella, cut up cherry tomatoes, herbs of choice - lots, thinly sliced red onions, leaves.

snowlie · 31/07/2013 22:11

I like bacon, avocado, steamed broccoli, spring onion with honey mustard dressing as a base and then I add leftovers, maybe cauliflower, capers, some fresh herbs, a bit of stray feta that needs using up.

MrsHowardRoark · 31/07/2013 22:16

Spinach, lambs lettuce, avocado with crispy bacon and croutons. All mixed with a balsamic honey mustard dressing.

This is not a healthy salad but it is bloody gorgeous and I always get compliments when I serve it.

I make myself couscous salad.
Couscous (cooked with a teaspoon of bouillon), diced veg (tomatoes, cucumber, spring onion, anything i fancey really), sliced olives, feta, can of chickpeas (chopped), Rocket (chopped), olive oil, balsamic vinegar. Makes loads and keeps in fridge.
it's very loosely based on This

Mozzarella, full flavoured tomatoes, fresh basil, rub a cut piece of garlic around the serving bowl and drizzle some aged balsamic vinegar and extra virgin olive oil over the salad.

Tabbouleh is nice especially if it is hot.

MERLYPUSS · 02/08/2013 20:32

I love little gem lettuce, celery, green apple, walnuts and blue cheese (cheddar?) with raisins and seeds. It's refreshing and crunchy and salty and sweet all rolled into one.

Hanginggardenofboobylon · 02/08/2013 20:41

Google Riverford Wet Garlic salad, tis lush!
