What can I do with butternut squash and kohl rabi?

Not necessarily together!

Our veg box has had butternut squash in it every week for ages, and we now have FOUR languishing in the veg tray. It's such a faff to peel and chop so I almost only ever roast it whole. Which is very nice, but dh is fed up with it as it reminds him of weaning food (which isn't surprising, as that's what we used it for with each child).

And as for kohl rabi - I thought I had a fairly wide knowledge of food, but I didn't even recognise it in the box, and I can't find a single recipe for it in any of the 8 recipe books I have on my shelf ATM. So what do I do with it?

i always make soup with it simmer butternut, carrots, onion, what other veg you want add stock and red lentils and simmer till it get thick add a little cumin and black pepper

I don't think you can really make them taste summery, can you?

Oh, I forgot that they had recipes on their site! The kohlrabi salad sounds interesting, and I might try making a bs curry, but the roasted bs recipe is too much effort - it's just my bung-it-in-the-oven-and-peel-it-when-it's-done recipe made more difficult!

Butternut squash makes a fantastic soup - although possibly not a seasonal recipie, worth holding on to for colder months maybe!
Chop squash into large chunks don't bother to peel, deseed.
Add shallots and garlic (peeled but whole) - spinkle with paprika - roast in oven for 30 mins (about 150 degrees I think!)
Leave to cool
Scoop out squash and put all veg into blender.
Add to vegetable stock (as much as you like depending on how runny you like your soup)

This freezes beautifully and you can add chilli flakes if you like it hot!

It occurs to me...bs are quite sweet, I wonder whether I could make bs icecream?

Squash with cream and sugar and vanilla! As my grandmother used to say "It's got eggs and cream and sugar in it? Of course it tastes good!"

oooh that does sound intriguing...can you make many ice creams using vegetables? I'm trying to justify buying an ice-cream maker.

No, seriously. I have an ice-cream making attachment for my Kenwood Chef, with which I have periodical love affairs. It's all been edible so far! I'll just have to fall for the Chef again, and try him on squash.
