What are you all baking this weekend?

DD and I are just starting an evening of bank g together for a friends party tomorrow. We're making the Hummingbird Red Velvet Roulade, Hummingbird Lemon Bars and the Hummingbird Brownies (can you spot the theme?!) The trick is not to let DS or DP get to them unt we get to the party!

I made 2 key lime pies and a baked chocolate cheesecake for a wedding yesterday. I was very happy with how they turned out, and I was complimented on them by other guests Grin. I normally have the reputation of being a terrible cook, so that's a real turn up for the books.

We went to a pick your own farm , picked raspberries and blackcurrants .

Raspberries are now jam , blackcurrants will be jam ( ran out of the proper sugar )

I know that's not baking , I did however make a lovely Lime and Blackcurrant Drizzle Cake , and a Big Chocolate Cake .

which is today's cake, nanny - the stars one? If so I think it looks great - fairly simple and really effective. How did you stick the upright stars together and get them to stay stuck in this weather?

do you mean the 30th birthday with pink and purple stars? no that was last junes cake. The lastest on is peach and cream with tiny cream dots, took forever to make the shapes tho.

Nothing major for me this weekend, but I made a random batch of good old fashioned butterfly cakes yesterday, to take to a scuba diving meet today. Of the 30 I made, I came home with 2! Obviously went down well!

But about 4 weeks ago, I made a fruit cake for the same event and instead of using alcohol to keep it moist, I used full fat coke. It was suprisingly lovely! None of that came home for tea! Grin

I did master a bunch of flowers/mini cup cakes last week though. I though they looked quite nice. I'll try to upload a picuture.

Another chocolate crispie cake effort here.

Used the two free packs of rice crispie shapes we got at tescos yesterday (they were giving them away) and the two chocolate yorkie trucks we had leftover from Easter!! Boys decorated them with marshmallows. Dh's verdict was 9/10!!

Making a strawberry pavlova next weekend - I use Nigel's wedding pavlova recipe, it's dead easy. Will also be making a banana bread this week. And prob fruit muffins with the boys.

Mo - I use tea for soaking fruit when I am making fruit cakes in bulk and don't want to spend a fortune on brandy. Works really well.

we did banana loaf with chocolate chips and lemon drizzle cake. Spent more time clearing the kitchen table of crap than actually making up the cake mixes but it was good fun.

I couldnt really rush it, but i made the cake, jam and creamed it, crumb coated, iced it and decorated all in a few hrs, which isnt ideal but its going to work with me tonorrow so had no choice.

Ended up doing maple & walnut scones instead of blueberry and very glad I did, as they work with sweet and savoury. Had them this PM with ricotta and a dribble of treacle. Will be toasting the others for breakfast tomorrow and topping with bacon.

Chocolate cake turned out very well, too.

Nailed it! I've made the homemade Oreos before and they've been good but too puffy, but having read the comments I think this is to do with using regular cocoa instead of Dutch processed so I used baking soda but left out the baking powder and got a really good, flat biscuit.

Yummy!

Now I'm just debating on whether to get some dutched cocoa from here, tempting...
