Please help me to decide what to have for dinner!

The only rules are as follows

  • it must be gluten, dairy, soy and egg free
  • it must incorporate the packet of minced beef in the fridge that I need to use up.
  • if it could use a butternut squash as well that would be great, although not massively important.

I have a very well stocked larder with any spices/grains/ lentils/ weird ingredients you could care to name, and have plenty of gluten free alternatives such as flour, pasta, bread etc.
So it is really the dairy, soy and egg which is a problem, I do have Pure margarine and almond and coconut milk though.
Oh, and I've run out of potatoes.

A challenge!!!

What about a cottage pie type dish with squash mash topping. Maybe that is too boring?

Chilli is a good idea, we like chilli and I have a tortilla press which hasn't seen the light of day for a while!
Meatballs with the squash as an ingredient or as a side dish?
I did think of a cottage pie type dish but we had shepherds pie a few days ago so too soon IMO.

We don't really eat squash much, I was going to do a squash risotto with it but don't really fancy it today, plus I want to use the beef today. .

You could make little Indian spiced meatballs, lentil dal laced with fresh spinach and coriander and roast cubes of squash with ginger and garlic. Add rice if you like..., perhaps cucumber and yoghurt on the side

21, sounds yummy- will try that another time especially as I still have the sodding squash!
And I do have coconut milk yoghurt (even though it's £££) so could have raita actually
