I have 2 salmon fillets - what can i do with them for tea?

salt and pepper, maybe some chilli flakes if you like, pan fry for a few mins both sides in tspoon oil till brown and crispy

nice with green beans/broccoli and soya sauce and rice

or cook in oven in foil parcel for 15 mins, salt and pep, bit of lemon juice and butter in there

Dh likes salmon baked in the oven. Put them on a sheet of foil or baking parchment, add a knob of butter (perhaps with a little ginger stirred in) add some strips of pepper, carrot and/or mange tout, add the juice of half a lemon or a slug of white wine, wrap them up in the foil or parchment and bake in the oven for about 20 minutes.

Really nice wrapped in parma ham or streaky bacon, dribble over some olive oil and season. Cook in the oven for about 20 mins. Smile

I'm having salmon for tea too. I was just going to steam it with new potato,and a salad. But I might try one of the other suggestions.

zap in microwave for 2 mins (or steam) flake salmon into some greek yoghurt, lemon juice and a good dollop of sweet chili sauce. Mix into pasta, rice or couscous as you prefer and serve with salad.

We're having salmon fillets tonight too! I'll mix a bit of red Thai curry paste, fish sauce and ginger or lemongrass and then pour over the salmon, wrap in baking paper and put in the oven for 20 minutes or so. Serving it with rice and green beans.

ok

"olive and sunblisgh tomato crusted salmon wiht roasted "vine" tomatoes"

you need

4 5 - 6 ox salmon fillets
3 ox white breadcrumbs
zest of half a lemon
1 oz stoned balck olives chopped
parley chopped
1 oz sunblush tomatoes chopped
2 tbsp olive oil

heat oven to 180. Line a baking sheet with nonstick parchemnt and put aslmon on it

in bowl mix breadcrumbs, zest olives tomatoes adn parsely add oila dn mix. Squish down firmly on fisha dn cook fro 15-20 mins till golden.

to accompany put a bunch of toamtoes on a "VINE" ( they mean a stalk ffs) drizzle olive oil over and ppeer.. bake in oven at smae time but on seperate tin

Er....... i have to admit that i made SALMON RISOTTO (a recipe from my mum) and it was lovely.

Spring onions and cucumber with risotto rice, chicken stock and tarragon with salmon thrown in.

Very simple and tasty

But thanks for all your ideas - will definitely be trying them out soon Grin

I can't ever be arsed to make risotto - all that standing and stirring, so I'm impressed. Sounds nice though.
