hot weather alternatives to cakes for staff

I'm Chair of Governors of our local special school and make the staff cakes at the end of every term to say thank you on behalf of the governors. It's so hot at the moment that I don't think anyone will be able to face cakes - can anyone think of a cool alternative? I was thinking possibly Nigella's lemon meringue ice cream in cornets (they have a freezer in the staff room) - can anyone think of anything else? It's only a v small school, so don't have to make hundreds of whatever it is - I usually make about 40 cakes I think.

What about lemon drizzle - the lemon us quite refreshing and the icing isn't too gooey?
