whats the best way to make a chicken stock

have the carcass and am thinking of doing it in the slowcooker overnight?

I personally wouldnt bother doing in slow cooker. What i usually do is put in large saucepan and cover with boiling water. Throw in carrot, onion, bayleaf etc if available. Bring to the boil and simmer for about an hour. Strain and then put in fridge overnight so can skim fat off in the morning. Did this on Sunday and hoping to have NIgel Slater creamy chicken risotto tonight! Yummy!
