Cold food for fussy children

Hi

Am hoping for some inspiration from you for some cold meals for these hot days.

Have v fussy DS (2) and more persuadeable DD (4)

Both fine with breakfast and picnic lunch but am looking for a few ideas for tea time meals. DS generally lives on pasta and bolognese, won't look at anything green (including sweets!) DD will eat a variety of things, but not into sauces beyond ketchup

Any suggestions on simple variations on pasta or potato salads which they might eat?
