So... if i wanted to make 40 rainbow cupcakes where should i start?

DD birthday is coming and she wants rainbow cake or cupcakes.
So i decided to make cupcakes because they are easier to give out. I did some googling and most of what i find is with a cake mix, anyone has an easy enough recipe that's not too sweet?
Also what is the easiest thing to put on top? buttercream? cream cheese frosting?
Never done cupcakes before so any help is very much appreciated.

225g butter or marge, 225g self raising flour, 225g castor sugar, 4 medium eggs, 1 tsp vanilla essence, 1 tsp baking powder. Separate into bowls and add food colouring. Bake in oven at 175 for 20 mins.

Butter icing would be easier to pipe. Or you can get cake frosting in cans with a nozzle.

Read it wrong, thought you wanted rainbow cupcakes but if you did rainbow cupcakes she gets the best of both worlds!

Or do rainbow splatter cupcakes. I think the trick is to use really bright colours, flouro were possible!

Purple you read right, rainbow cupcakes, your recipe seems brilliant, easy enough that I won't ruin.
I bought the wilton gel colours, should be bright enough and I guess I'll make a couple where I try and make layers and the rest (the kids ones) somewhere between a splatter and a layer, as long as there are colours DD should be happy. Damm you rainbow dash!

Cakes do look lovely when they are done. I love making themed cakes. There's a few photos of some of them on my profile.
