My fave is cherry tomatoes,pref different colour ones, halved mixed with blanched mangetout and garden peas (defrosted raw frozen is fine) mixed with a lovely balsamic vinaigrette. Looks lovely, tastes delicious.

Tabbouleh. 5 large tomatoes, skinned, de-seeded and chopped small; 1 cucumber, de-seeded and chopped small; 1 bunch spring onions, chopped small; 6 tablespoons (or more if you prefer) bulgar wheat, soaked for half an hour (just cover with boiling water - drain in sieve if too soggy); 2 bunches flat leaf parsley, chopped not too small; 2 small bunches mint leaves, chopped not too small; juice of 3-4 lemons; 10 tablespoons olive oil. Mix tomatoes, cucumber and onion, squeeze on lemon juice, mix in parsley and mint, mix in bulgar wheat, add olive oil, taste and add more oil or lemon depending on how you like it. Definitely add quite a lot of salt. Should be zingy and delicious.

Cold beef and noodle salad - glass noodles ( very thin, white see through noodles ) sear rump or rib eye steak ( rubbed with garlic)for min each side so rare. Red onions thinly sliced bean sprouts, soy sauce, seasoning. ( can add stir fried mange tout and capsicum )

Buffalo mozzarella and tomato salad , simple . Slice beef tomatoes and layer in circle with good quality mozzerla and fresh basil, drizzle with olive oil, balsamic and season.

Roast duck salad. - season suck breasts in 5 spice and soy, sear until med- rare and rest.
Thinly slice cucumber and spring onion and serve in washed baby cos lettuce leaves so they are like Peking duck wraps.

Can't beat a chicken Caesar salad with roast chicken, bacon lardons and finished with soft boiled egg.

Potato salad always adds something good to a bbq - just boil halved new potatoes till tender, drain, cool and mix in good quality mayonnaise

Depends on the meat but a peach salsa is good - dice peaches, a little chopped chilli, finely diced shallot, chopped coriander then dress with lime and a splash of olive oil

Parsnip and date is good too - peel and grate a couple of parsnips, add about a dozen chopped dates, 2 tablespoons choppped mint, a cup of natural yoghurt, a tablespoon of lemon juice, 2 of runny honey and 2 of evoo. Mix and season

Sweet potato & feta salad a big BBQ favourite here.

Baby spinach leaves
Finely chopped red onion
Cubed feta
Toasted pine nuts
Sweet potato - peeled, sliced, par-boiled for 5-7 mins, toss with olive oil then griddle til striped & soft

Dressing - olive oil, balsamic vinegar, whole grain mustard & honey

Can't do links just now, but google 'Jamie Oliver broccoli salad'.

It's from his American book and it is amazing, great with BBQ food, and so tasty, everyone I've made it for loved it.

Sarah Raven one with radishes ,mango, walnuts
Jamie one with apples cut with mandolin walnuts and blue cheese
Puy lentil one with sun dried toms, onion, herbs, cherry toms
Greek salad hard to beat with cucumber toms feta oregano etc

Or just leaves with herbs, a few seeds, a sherry vinegar ex voo dressing and lots of salt.

This is amazing, it has black beans, avocado, feta, cherry tomatoes and corn. You can also add chicken for a main course and I like to use peppadew peppers as well for an extra kick.

This broccoli slaw from Smitten Kitchen is lovely coupled with Tabboleh, I don't bother skinning and deseeding the toms, and a fresh Greek Salad you've covered all bases :)

Watermelon

Mint
Lime juice

Best ever dressing - made at least twice per week in this house - is the original Delia's Summer cookbook one:-

Smash one fat clove of garlic with 1 heaped tsp Maldon salt
Add 1 heaped tsp English mustard powder
Mix in 1 tbsp balsamic vinegar (or half/half balsamic with red or white wine vinegar)
Add 4 tbsp olive oil
Shake vigorously in a jar

Livens up any salad.

I make a version of this salad-it's romaine, toasted pecans and orange in a red onion dressing. Instead of oranges you can either use strawberries or grapes to make it more seasonal. All versions are delicious. You can also make all the components and just assemble when needed.

I ended up makingthe Tabbouleh and Lorraine Pascals feta,mango one both very tasty so thanks girls.
Loads of nice recipes on here ,will book mark this thrread.

Tuna Bean Salad

2 tins beans (I use canneloni and borlotti)
1 tin tuna in oil
1/2 red onion, chopped.
lemon juice
olive oil
salt and pepper
flat leaf parsley
Capers, 2 tbsps (optional)

Drain and rinse beans, drain tuna. Mix together gently onion, capers and roughly choppped parsely. Add seasoning, lemon juice and olive oil
to taste.

Far better made day before and put in fridge overnight.

My favourite is cous cous, feta, pea and mint. You can use one of those pre flavoured cous cous packets if you want, other wise flavour the plain cous cous with some veg stock, salt, pepper and paprika.

Make the cous cous and cook the peas. Leave both to cool before mixing. Add a handful of chopped fresh mint leaves and enough cubes of feta to taste. Then use extra virgin olive oil, salt, pepper and plenty of lemon juice to make a dressing. Shake it all up together and stick in the fridge for a couple of hours to let the flavours infuse.

Yum!

Our favourites at the moment are

potato salad, cook new potatoes in skins, mixed with chopped onions then leave to cool, then add mayo and crème fraiche

celery and apple mixed with mayo

rice salad. cooked rice mixed with red onion, red pepper, peas and sweetcorn.

coleslaw, white cabbage, onion & carrot mixed with crème fraiche
