Salad with chicken breast on top - what kind of sauce for the salad, what to do with the chicken?

That's it really.

I love that kind of thing in restaurants and would like to recreate it at home, but am not sure how.

Any tips/recipes?

I just use ready made Cesear sauce and sprinkle crispy bacon on top.

and croutons - easy to make. Just roast some chunks of white bread in a drizel of olive oil

pureed apricots (Tinned fine) and cream cheese stuffed chicken breasts wrapped in crispy bacon or pancetta

Pizza Express salad dressing would be good with this. Marinate some chicken breast in olive oil, lemon juice and garlic (I use dried garlic powder) then grill or griddle it. Bung it on top of the salad with the dressing.

I would melt a bit of cheese onto the chicken, and then make a nice spicy salsa/harissa-type sauce out of passata, chopped tomatoes, chopped chillies, minced garlic, lemon juice/zest, black pepper, olive oil and fresh coriander. If I wasn't trying to be good and not eat anything fatty or salty Sad
