I need recipes to convert rhubarb-hating DH!

Title says it all really. DH hates rhubarb because of school dinner memories, but it was really cheap in Aldi so I got some anyway.

He thinks he could cope with it in a crumble, so what are your top tips for making the best rhubarb crumble ever?

Any other wonderful puds I could try if that goes down well? Thanks!

Not exactly a desert but probably could be served warm with ice cream, but i made this rhubarb cake yesterday and it was delicious.

IME you won't succeed.. sorry, but rhubarb is either love it or hate it.

However, fwiw, rhubarb fool - disguise with lots and lots of cream and ginger, with maybe some chocolate ginger biscuits crumbled up in the base.

Delia has a recipe for rhubarb crumble ice cream, should be on her website. I've converted more than rhubarb hater with it. It's gorgeous.

Forget crumble, make nigelas (I think) polenta and rhubarb cake. Converted dh who was just like yours!

My DH says rhubarb is of the devil and won't touch it. A couple of weeks ago I tried a Nigel Slater recipe for rhubarb cooked in sloe gin. Not only did he try it, but went back for a couple more bits. It's great - I've done it several times since.

Cut the rhubarb into chunks and put in oven proof dish. Cover in sloe gin and a bit of water, and some sugar. Bake in low oven for 45 minutes.

Nigel Slater has quantities, but I only measured things the first time... And last time I made it with some damson vodka stuff DH made last summer, that my friends say is like cough mixture. Wasn't like cough mixture after being in the oven with sloe gin, rhubarb and sugar!!

rhubarbtini

chop up rhubarb sprinkle with a lot of sugar and roast
strain the juice off and throw away rhubarb !
1 part rhubarb juice, 1 part suager syrup and 2 parts vodka shake over ice.
yummy

You could mix the rhubarb with apple next time, they go well together.
We had the rhubarb cake i linked to above warm with icecream and it was lovely.

I put grated ginger and orange juice in my rhubarb crumble. It's very, very good. People who 'hate' rhubarb have had seconds of that crumble.

Today we had rhubarb, raspberry & ginger trifle and very good it was too. :) As DS1 was eating it there was only apple juice in the sponge but for a grown up occasion I'd like to try something I saw online & soak them in Pimms...
