my first veg box.. what can I do with spring greens? butternut squash? leeks???

We wouldn't usually use these three things (and I haven't even heard of spring greens!)

Can I have some meal suggestiosn incorporating them please! Have an abundance of onions and carrots too if that's any help!

Butternut squash crumble - just make up a savoury crumble mix (cheese and herbs instead of sugar), put it on top of the chopped up squash and a load of cream (its not a low cal recipe!) and bake int he oven - goes all mushy and is gorgeously sweet and easy to make. Can't remember if I parboiled the squash first or not

I have to admit I haven't used any recipes off this lol Blush however I'm printing it out as I'm sure we'll get these veg again!

Loved the leeks, did a leek, bacon and creme fraiche pasta and all 5 of us very impressed all round. Unsure about spring greens (if I identified them correctly! I don't know all my veg!) found a recipe for mustard chicken and spring green sauce... just tasted smelt and looked like cabbage to me!

Doing a stuffed butternut squash tomorrow... not sure about that at all but hey will give it a go.
