I just can't think today so seeking inspiration!
Just for DH and I, we've had dinner this evening and lunches are pretty well sorted for the week so it's just ideas for evening meals needed without doing a massive weekly shop!
I do need to go to the shops tomorrow for dog food so I can pick up a few bits and bobs but I want to get to next Monday without doing a proper shop as we are away for the weekend.

what can I make with this lot:

Beef stewing steak
chicken breasts
chorizo
potatoes (lots of!)
onions - red and white
half a red pepper
broccoli
carrots
leeks
Mozzarella
frozen peas
x2 blocks shortcrust pastry

also have the usual store cupboard type things such as rice, pasta, cous cous, tinned tomatoes, tuna & sweetcorn etc.

TIA

I'm thinking Paella- chicken, choriza, onions, pepper, peas, sweetcorn. No seafood, but I've skipped it before.

Patatas bravas type thing. Potatoes fried/roasted till crunchy, then tomatoes, chopped pepper, slices of chorizo on top and cooked in oven until tomatoes reduce a bit and become 'saucey'.
Served with mozzerella stuffed chicken?

Thank you Tiggy patatas bravas sounds like a great idea! I'd have never thought to make that but I love it when we go out to eat! That's definitely going on the list Smile

We had Indian kebabs last night, you could use the stewing beef if you cut it into small pieces - 1cm x 2cm and marinate overnight with yoghurt, ginger, garlic, garam masala and a tablespoon of toasted coconut all mixed together. Thread onto skewers and grill or bbq. Grate the carrots with some chopped dill, doesn't need a dressing. Thinly slice onion then mix with a couple of tablespoons of lemon juice and 1/2 teaspoon of chilli powder. Serve with rice and yoghurt.

You could make pea and potato cakes with mashed potatoes, peas, grated ginger and chopped dill or coriander, firm up in the fridge then shallow fry and serve with chutney and steamed broccoli and carrots.

Chicken and broccoli stir fry here with rice is quick and easy, tastes great

What about buying some eggs when you are at the shops and making a frittata (you know a big omelette type thing). Fry up pepper, leeks, onion, peas, boil the potatoes, cut into small pieces, add to frying pan, then pour beaten up eggs over the top. Put it under the grill, then put some cheese on top.
