Thinking of doing a risotto for dinner tonight for a change. DC's reasonably unfussy. Any suggestions for recipes.

I use arborio or carnaroli rice, and always put in a glass of white wine, and veg stock made using Marigold bouillon powder. One pan with the stock in, keeping hot, and one pan for the risotto, I usually use a cast iron casserole, but any pan would do. There's about 10-15 mins of adding stock bit by bit and stirring, you can add more liquid at a time and stir less towards the end of the cooking time. When it's done, stir in some butter and grated parmesan and leave with the lid on for 5 mins.

There are plenty of recipes for baked risotto - see here one by Delia or here BBC Good Food but I usually don't mind a bit of gentle stirring while I drink a glass of wine for 20 minutes Grin
