Salads or sides to go with slow roasted lamb?

Just that really. To serve 5. I am roasting 2 lamb breasts v slowly and then will whack them under the grill for 20 mins to get crispy skins.

Its so lovely and hot I don't want to do an actual roast. I have lots of new potatoes, and loads of tomatoes, cucumber, spinach, some peppers available. Lemons, chilli, limes etc too.

There are spring onions, mint, thyme, rosemary, garlic all in the garden.

Sadly we have one picky eater amongst us (and she is a guest!) who doesn't do chilli, feta, olives, spice in general, salad dressings (aarrrgh!)

Inspire me please!

I do 'baby salad' for dd2, who is fussy about salads - a little plate with cucumber batons, carrot and pepper sticks, cherry tomatoes. Then everybody else gets the nice stuff!

Cucumber, red onion, spinach, mint, lemon juice, feta and a bit of red chilli would be lovely.

Tsatziki would be nice too.

Roast the potatoes with garlic and rosemary.

Lentils with a lemon juicy dressing, maybe with feta, cucumber and tomato mixed in?

Go Greek. Have some feta on the side, but otherwise make a Greek salad.

Mmm I hadn't considered roasting the new pots, that sounds lovely. I was thinking boiling them with lemon mint, then chucking loads of butter round them. Might do half and half!

I like the baby salad idea Remus but the picky one is my mum and she might feel a bit patronised. She would like iceberg, cucumber and chopped tomatoes in a bowl. And she would add mayo. I would be depressed to be presented with that... I like oil & lemon dressings, chilli, strong flavours, revolutionary things like spring onions & red onions raw

Make your mum's 'baby salad' in a big bowl (but not much of it). You will know it is her baby salad but she will think it's there for everybody!

I'd do salad and offer a variety of dressings (a lovely chilli olive oil one, a minty lemony one, plus mayo, or garlic mayo dressing if your mum would like it). I wouldn't include feta anyway as I think it's a bit strong to go with lamb, which I think is quite delicate.

Watercress, pomegranate and orange salad- always serve this with lamb ... but not sure if you want to go out for ingredients ??
