Got sausages and a bottle of cider

How do I make a casserole please?

Pour all cider over browned off sausage and veg and put in oven? Will it reduce and turn into nice sauce? Should I put whole bottle in??

Just cover the sausages with the cider. You could always drain off some of the liquid at the end of cooking and thicken it with gravy granules or cornflour. I cheat and put gravy granules or a bit of flour in at the beginning to thicken the sauce.

First, brown your sausages well in a large frying/saute pan; when browned, take them out of the pan (leaving any oil behind in the pan) and cut into chunks
Then chop/dice/slice onions, carrots and celery, and soften in the remaining oil in the saute pan, plus another glug of oil, season with salt and black pepper and any herbs that you like/have to hand
Once softened and starting to brown, add the chopped sausages and stir together
Sprinkle over a generous tablespoon of plain flour and stir together; cook for around a minute or so
Pour over the cider, stir so that it all gets amalgamated; turn down the heat, cover the pan and simmer for around 20-30 mins.
