I'm making bread with yeast that's 2 years out of date.

What do you think the chances are of it rising? It's dried yeast if that makes a difference. It's currently proving.

I would have tested it first, in some warm water with a little sugar (or fruit juice) and a dessertspoon of flour, all mixed together and left for 15 minutes.

Should be fine - I've made bread with dried active yeast that's been in the fridge for 5 years!

Ah, never thought about testing it first. Village shop doesn't sell anything as exotic as yeast or I'd have bought some new.

It worked. It was actually best before 2008 not 2010. So nearly five years! Bread looks good and its risen nicely.
