My easiest, most requested and most impressive. Heaven on a stick!

Chicken satay:
4 tbsp peanut butter, 100ml soy sauce, pinch chilli flakes (optional-I leave out if doing family/kids), diced chicken (3-4 breasts). Mix, thread onto skewers and grill on barbi. Heaven on a stick!

That sounds good.

Simple lamb chops: use thin lamb chops, not fat loin ones. Marinade them in a mix of love oil, lemon juice with fresh thyme and rosemary. Cook fast over hot coals basting with remainder of juices. Always very popular.

Tbsp each of soy sauce, honey, lemon juice. 1 crushed clove of garlic & a small thumb of ginger, finely chopped. Add a small amount of water & pour over cubes of chicken. Marinate for a while before threading onto skewers with veg - I like mushrooms, pepper & onion.

Must get the BBQ out soon! Grin

These all sound great, my repertoire will be v impressive! I've just (after many years of persuading) convinced Dh to let us have a gas BBQ (he's a purist-loves the whole Boy Scout thing!). Since we got it on Friday I've used it non-stop. Today I did breakfast (sausages), lunch (trout and salad) and dinner (chicken satay wraps). I'm obsessed to the point where Dh said to the kids "mom's outside with her new baby"!

With the peach/nectarine puds-do you place them straight onto the rack or on/in foil?

Thanks all for the recipes

Chicken marinaded in either a Jerk paste or a Chipotle paste. I BBQ a selection of courgettes, onions, mushrooms, pepper, aubergine, cooked potato. Green salad, homemade coleslaw, guacamole, salsa. Home made fresh chutneys.

I do a sticky marinade for ribs and wings which I gently boil in stock before coating in the marinade and finishing on the BBQ.

It's a big sticky tasty mess but I mix tomato ketchup, brown sugar, soy sauce & Worcester sauce togeather.

We tried out the satay recipe tonight - yum! Grin Thanks OP!

Fresh tuna cubed and marinated in Rose harissa thinned down with a bit of lemon juice then put on skewers and BBQ'd.

Goes well with a chickpea salad made with finely sliced red onion and cucumber and finely chopped coriander with lots of salt, pepper, lemon juice and EV olive oil.
