1st day on my own with toddler and newborn. Supper?

OK, silly title I know but maybe it will get attention.

I have no idea what to do about supper tonight, recipes or logistics. DH has been home with us for the past month and either he or DFIL have been cooking supper.

Today is my first day on my own qwith DD1 2.5 and DD2 1 mo. I am managing to some extent but supper is eluding me. We are vegetarians. Any ideas for something simple and nutritious? Key word here is simple.

Fry onion and garlic (plus chilli, olives, herbs - anything that you have and fancy adding to the mix)

Add a can of chopped tomatoes.

Stir into Penne.

One of my favourite meals though I add a little bacon as I'm not a vegetarian.

Fajitas with corn on the cob.
Roasted veggie sausages & roast potatoes bung in the oven minimum effort. Microwave some veg to go with it.

I agree with pasta, pesto and done cheese on top. Perhaps some garlic bread and salad.

You must've had that first simple supper by now- what did you go for? Pasta sounded like a winner to me. If you need another dish, I'd suggest something like a one pot wonder, this vegetarian jambalaya is quick, easy and tasty. Although you do need to chop the veggies...
