You haven't specified a budget so I'm going to assume there isn't one. The very best champagne as far as I'm concerned is Armand De Brignac. There are three different variations, Brut Gold, Rosé and Blanc de Blancs which are all very good. Highest end of the budget though at about £400-500 per a bottle but it's exceptionally good.

Next I would say Dom Perignon 2004 vintage is popular at the moment, you can get this for about £100 - £150 a bottle.

Under £100 I would look at Bollinger, Taittinger, Veuve Clicquot and Laurent-Perrier.

Hope that helps

Ah I see you have said £40, so then I would go for the Bollinger, Taittinger although you wouldn't be able to get a couple of bottles of those. Perhaps instead going for a finest range of a supermarket brand?

Veuve too.

I second Prosecco. It's usually light and verrry drinkable.
